21) Ponytail Pony Cake with Candy Mane

Ingredients
  

  • 1 box yellow cake mix plus eggs/oil/water per box
  • 2 cups vanilla frosting store-bought or homemade
  • Food coloring: pink and brown about 1/2 tsp each
  • 1 cup mini marshmallows
  • 1 cup multi-colored candy pieces M&M-style
  • 1/2 cup brown candy melts
  • 1 tube black decorating icing for eyes and nostrils
  • 9- inch round cake pan greased

Method
 

  1. Preheat oven to 350°F. Prepare 9-inch round pan and bake cake per box directions (usually 25–30 minutes). Cool completely.
  2. Tint half the frosting pink and half brown. Reserve 1/4 cup white for highlights.
  3. Trim top slightly so cake sits flat. Spread brown frosting over lower half of cake for the face; pink on top for the ponytail area.
  4. Press mini marshmallows along the crown where the mane will start. Layer candy pieces over marshmallows to form a colorful ponytail.
  5. Melt brown candy melts and pipe a small ear shape on parchment; chill until set and place on cake.
  6. Use black icing to draw eyes and nostrils. Add white frosting dots for eye shine.
  7. Chill 20 minutes to set candies before serving.
