21) Crockpot Jambalaya Dump Dinner

Ingredients
  

  • 1 lb boneless chicken thighs cut into 1-inch pieces
  • 8 oz smoked sausage sliced
  • 1 can 14.5 oz diced tomatoes with green chiles
  • 1 cup long-grain rice uncooked
  • 1 small onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 2 cups low-sodium chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp cayenne optional
  • 1 tsp salt 1/2 tsp black pepper

Method
 

  1. Add chicken, sausage, tomatoes, rice, onion, pepper, and garlic to crockpot. Stir to combine.
  2. Pour in broth and sprinkle spices over top; do not stir again.
  3. Cook on low 3–4 hours or high 1.5–2 hours, until rice is tender and chicken reaches 165°F.
  4. Fluff gently with fork, taste and adjust salt. Serve hot with a squeeze of lemon if desired.
