21) Corned beef hash with tots and poached eggs

Ingredients
  

  • 2 lb frozen tater tots
  • 2 tbsp vegetable oil
  • 1 lb cooked corned beef chopped
  • 1 medium onion diced (about 1 cup)
  • 1 green bell pepper diced (about 1 cup)
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 6 large eggs
  • 2 tbsp white vinegar
  • 2 tbsp chopped fresh parsley optional

Method
 

  1. Bake tots on a rimmed sheet at 425°F for 20–25 minutes until golden and crisp. Toss once halfway.
  2. Meanwhile heat oil in a large skillet over medium. Add onion and pepper; cook 5 minutes until soft.
  3. Add chopped corned beef, garlic powder, salt, and pepper. Cook 6–8 minutes until edges brown.
  4. Spread baked tots in a large baking dish. Spoon corned beef hash over tots and press lightly.
  5. Poach eggs: bring 3 quarts water and vinegar to a simmer, stir to create whirlpool, crack eggs one at a time and cook 3 minutes for runny yolks.
  6. Top casserole with poached eggs and parsley. Serve immediately.
