Ingredients
  

  • 1 box brownie mix about 18.3 oz plus required oil, eggs, water per box directions
  • 2 tbsp cocoa powder optional, for deeper chocolate
  • 1/2 cup chocolate chips optional
  • 1 pint firm ice cream vanilla, chocolate, or flavor of choice
  • 2 tbsp powdered sugar for rolling, optional

Method
 

  1. Preheat oven per brownie mix directions; parchment-line two baking sheets.
  2. Prepare brownie batter per package; fold in optional cocoa and chips.
  3. Drop tablespoon scoops 1.5 inches apart into small rounds.
  4. Bake 8–10 minutes until edges set but centers remain soft; cool on sheet 5 minutes.
  5. Cool cookies completely on rack to avoid melting ice cream quickly.
  6. Sandwich a small ice cream scoop between cookies; press gently. Roll edges in optional powdered sugar.
  7. Freeze sandwiches on tray 30–60 minutes to firm before serving.
