21) Brownie mix espresso brownie biscotti for dunking

Ingredients
  

  • 1 box 18–20 oz brownie mix (plus ingredients called for on box: eggs, oil, water)
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup all-purpose flour if mix is very fudgy; optional
  • 1 large egg beaten (for egg wash)
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with parchment.
  2. Mix brownie mix, espresso powder, vanilla, and eggs/oil/water per box directions; fold in chocolate chips and flour if batter is too wet.
  3. Shape dough into a log about 12 inches long and 2–3 inches wide on the sheet; brush with beaten egg.
  4. Bake 20–25 minutes until set; cool 10 minutes, then slice diagonally into 3/4-inch pieces.
  5. Reduce oven to 300°F. Arrange slices cut-side down and bake 10–12 minutes per side until crisp.
