20-Minute Grilled Lemon Herb Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • Juice and zest of 2 lemons
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
  3. Place the chicken breasts in a large ziplock bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let the chicken marinate for at least 15 minutes.
  4. Remove the chicken breasts from the marinade and grill them for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. Transfer the grilled chicken to a plate and let it rest for a few minutes before slicing.
  6. Garnish with extra lemon slices and fresh herbs if desired, and serve hot.

Notes

For a deeper flavor, let the chicken marinate for up to 2 hours in the refrigerator. This recipe is versatile and can be paired with a variety of side dishes like grilled veggies or a fresh salad. Leftover chicken can be used in salads, sandwiches, or wraps for quick meals.
