- Preheat your grill to medium-high heat.
- In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
- Place the chicken breasts in a large ziplock bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let the chicken marinate for at least 15 minutes.
- Remove the chicken breasts from the marinade and grill them for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Transfer the grilled chicken to a plate and let it rest for a few minutes before slicing.
- Garnish with extra lemon slices and fresh herbs if desired, and serve hot.
