Preheat oven to 400°F (200°C). Line a baking sheet with foil and spray with cooking oil.
Pound chicken to even thickness (about 1/2 inch) for quick, even cooking. Season lightly with salt and pepper.
Mix panko, Parmesan, garlic powder, Italian seasoning, and olive oil in a shallow bowl until moistened.
Dip each breast in beaten egg, then press into the breadcrumb mix to coat both sides.
Place on prepared sheet and bake 18–22 minutes, until internal temperature reaches 165°F and crust is golden.
Let rest 5 minutes before slicing; garnish with parsley if desired.
