2) Smoked Salmon Cucumber Bites

When I need something that looks like I tried but took me fifteen minutes, this is the one. The cucumber acts as the cracker, so there's nothing to get stale in transit. They've survived church potlucks and long tournament days in a cooler without turning soft or weird.

Ingredients
  

  • 2 large cucumbers sliced into ½-inch rounds
  • 4 oz cream cheese softened
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon chopped fresh dill
  • 4 oz smoked salmon cut into small strips
  • ¼ teaspoon black pepper

Method
 

  1. Pat the cucumber slices dry with paper towels so the topping stays put.
  2. Stir the cream cheese, lemon juice, dill, and black pepper in a small bowl.
  3. Spoon or pipe about 1 teaspoon of the cream cheese mixture onto each cucumber slice.
  4. Top each one with a small fold of smoked salmon.
  5. Chill for at least 20 minutes before packing them in a single-layer container.
