2. Slow Cooker Wild Rice and Mushroom Soup

I love tossing this together at lunchtime. By the time the kids are home from school, the house smells amazing.
Servings: 4 servings

Ingredients
  

  • 1 cup uncooked wild rice
  • 16 ounces white button mushrooms sliced
  • 3 carrots peeled and diced
  • 2 stalks celery diced
  • 1 yellow onion diced
  • 6 cups vegetable broth
  • 3 tablespoons butter
  • 1 cup whole milk

Method
 

  1. Rinse the wild rice under cold water.
  2. Place the rice, mushrooms, carrots, celery, onion, and broth into a large slow cooker.
  3. Cover and cook on low for 4 hours, or until the rice is tender.
  4. Just before serving, stir in the butter and milk.
  5. Let the soup sit for five minutes to warm the milk through, then serve.
