2. Hearty Beef and Barley Stew

Barley is a wonderful, inexpensive way to bulk up a soup. This stew is so thick you could almost eat it with a fork.
Servings: 4 servings

Ingredients
  

  • 2 pounds beef chuck roast cut into bite-sized pieces
  • 1 cup pearl barley rinsed
  • 3 large carrots peeled and sliced
  • 2 russet potatoes peeled and diced
  • 1 onion chopped
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme

Method
 

  1. Add the beef, barley, carrots, potatoes, and onion to the slow cooker.
  2. In a small bowl, whisk the tomato paste and thyme into a cup of the beef broth until smooth, then pour it into the pot along with the rest of the broth.
  3. Cover and cook on low for 8 hours until the beef falls apart easily.
  4. Season with salt and black pepper to taste before ladling into bowls.
