2) Creamy Chicken and Wild Rice Slow Cooker Soup

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 cup wild rice blend uncooked
  • 1 medium carrot diced
  • 2 celery stalks diced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 6 cups low-sodium chicken broth
  • 1 cup half-and-half
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Put chicken, rice, carrot, celery, onion, garlic, broth, thyme, salt, and pepper into the slow cooker.
  2. Cover and cook on low for 4–5 hours, or until rice is tender and chicken reaches 165°F.
  3. Remove chicken to a cutting board and shred with two forks.
  4. Stir shredded chicken, butter, and half-and-half into the cooker. Heat on low 10–15 minutes until warmed through.
  5. Taste and adjust salt and pepper. Serve hot.
