19) Slow Cooker Black Bean and Corn Soup

Ingredients
  

  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes with green chiles
  • 1 small onion diced (about 1 cup)
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp lime juice
  • Optional toppings: shredded cheddar sour cream, cilantro

Method
 

  1. Add beans, corn, tomatoes, onion, garlic, broth, cumin, and chili powder to the slow cooker. Stir once.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  3. About 15 minutes before serving, mash some beans with a potato masher for a thicker soup. Stir in lime juice.
  4. Taste and add salt and pepper. Serve with toppings your crew likes.
