18. Hot Chocolate Peppermint Cookies

A cozy winter favorite that my kids beg for all year long. The cocoa powder makes them rich, and the peppermint adds a perfect crunch.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup mini marshmallows
  • 1/3 cup crushed peppermint candies

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cream the butter and sugar together. Add the egg and vanilla.
  3. In a separate bowl, whisk the flour, cocoa powder, and baking soda. Gradually add to the wet ingredients.
  4. Fold in the mini marshmallows and crushed peppermint candies.
  5. Scoop the dough onto a baking sheet.
  6. Bake for 9 to 11 minutes. Let cool on the pan for a few minutes before moving them.
