17) One-Pot Minestrone with Pasta

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 carrots diced (about 1 cup)
  • 2 celery stalks diced (about 1 cup)
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 14 oz can diced tomatoes
  • 6 cups low-sodium chicken or vegetable broth
  • 1 15 oz can cannellini beans, drained and rinsed
  • 1 cup small pasta ditalini or elbow
  • 2 cups chopped spinach or kale
  • Salt and pepper to taste
  • Grated Parmesan for serving optional

Method
 

  1. Heat oil in a large pot over medium heat. Cook onion, carrots, and celery until soft, about 5 minutes.
  2. Add garlic, oregano, and basil. Cook 1 minute, stirring.
  3. Pour in tomatoes and broth. Bring to a simmer.
  4. Stir in beans and pasta. Cook until pasta is tender, about 10 minutes.
  5. Mix in spinach. Cook 1–2 minutes until wilted. Season with salt and pepper.
  6. Serve with Parmesan if you like. I usually ladle it into bowls and hand them off.
