Preheat the oven to 400°F (200°C) and line a baking sheet with parchment. Whisk the Dijon, maple syrup, and BBQ sauce in a small bowl; season lightly.
Cut puff pastry into 12 equal rectangles. Brush each with a thin layer of sauce.
Place one sausage on each rectangle, roll up, and seal edges with a little egg wash.
Arrange the rolls seam-side down on the prepared baking sheet, leaving space between them.
Brush tops with egg wash and sprinkle sesame seeds if using.
Bake for 18 to 22 minutes, until the pastry is puffed and deep golden and the precooked sausages are hot. Serve warm.
