17. Creamy Cheeseburger Soup

If you have kids who are picky eaters, this is the recipe to try. It tastes just like a cheeseburger and is always requested at our house.
Servings: 4 servings

Ingredients
  

  • 1 pound ground beef browned and drained
  • 3 russet potatoes peeled and diced
  • 1 cup shredded carrots
  • 1/2 cup diced onion
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 8 ounces processed cheese like Velveeta, cubed
  • 1/2 cup milk

Method
 

  1. Brown the ground beef with the diced onion in a skillet, drain the grease, and add the mixture to the slow cooker.
  2. Add the diced potatoes, shredded carrots, chicken broth, and garlic powder.
  3. Cover and cook on low for 6 hours until the potatoes are soft.
  4. Stir in the cubed cheese and milk.
  5. Cover and cook on high for 15 minutes, stirring occasionally, until the cheese is completely melted and the soup is creamy.
