16) Crockpot Corn Chowder with Bacon

Ingredients
  

  • 6 slices bacon chopped
  • 1 medium onion diced
  • 3 cups frozen corn
  • 3 medium potatoes peeled and diced (about 4 cups)
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp cornstarch + 2 tbsp cold water optional, for thicker chowder

Method
 

  1. Cook bacon in a skillet until crisp. Drain on paper towels and reserve a tablespoon drippings.
  2. Put onion, potatoes, corn, broth, thyme, and bacon drippings in slow cooker. Stir, then cover.
  3. Cook on low 6–7 hours or high 3–4 hours, until potatoes are tender.
  4. Stir in milk and cheese until melted. Taste and add salt and pepper.
  5. If you want it thicker, mix cornstarch and cold water, stir into chowder, and cook on high 15–20 minutes.
  6. Sprinkle bacon on top before serving.
