16. Buttery Cracker Topped Chicken and Rice

We end the list with pure, nostalgic comfort. The buttery, crispy cracker topping is the best part, and my kids always fight over the corner pieces.

Ingredients
  

  • 3 cups cooked white rice
  • 2.5 cups cooked chicken shredded
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 sleeve Ritz crackers crushed
  • 4 tablespoons butter melted

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and grease a 9x13 baking dish.
  2. In a large bowl, mix the cooked rice, shredded chicken, cream of chicken soup, sour cream, and chicken broth until well combined.
  3. Spread the mixture evenly into the baking dish.
  4. In a small bowl, toss the crushed Ritz crackers with the melted butter until the crumbs are coated.
  5. Sprinkle the buttery cracker crumbs evenly over the casserole.
  6. Bake for 30 to 35 minutes until the casserole is bubbling and the cracker topping is golden brown.
