15) Slow-Cooker Beef and Pepper Fajitas

Ingredients
  

  • 2 pounds beef chuck roast sliced into thin strips
  • 3 bell peppers sliced
  • 1 yellow onion sliced
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 flour tortillas

Method
 

  1. Place the beef, peppers, and onion in the slow cooker.
  2. Stir the lime juice, chili powder, cumin, salt, and pepper together, then pour it over the beef.
  3. Cover and cook on low for 6 to 7 hours, until the beef is tender.
  4. Spoon the filling into warm tortillas and add shredded cheese, sour cream, or salsa as needed.
