15) Peach-Bourbon Summer French Toast Bake

This is the summer recipe. Fresh peaches, a splash of bourbon in the custard, pecans on top if you have them. Sweet and a little warm from the bourbon, with fruit that softens into the bread while it bakes.

Ingredients
  

  • 1 loaf challah or brioche cubed (10 cups)
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup brown sugar packed
  • 2 tbsp bourbon
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 3 cups sliced ripe peaches about 4 medium
  • 2 tbsp butter melted
  • 1/4 cup chopped pecans optional

Method
 

  1. Preheat oven to 350°F and butter a 9x13 pan.
  2. Toss bread cubes into the pan and scatter peaches over top.
  3. Whisk eggs, milk, cream, brown sugar, bourbon, vanilla, and cinnamon in a bowl.
  4. Pour custard evenly over bread and press gently so bread soaks.
  5. Drizzle melted butter and sprinkle pecans on top.
  6. Bake until puffed and golden, 35–40 minutes.
  7. Let rest 10 minutes before serving.
