14. French Onion Soup with Thick Gruyere Toast

Making French onion soup in the slow cooker takes away all the tedious stovetop stirring. The onions caramelize beautifully over the long cooking time.
Servings: 4 servings

Ingredients
  

  • 4 large yellow onions thinly sliced
  • 1/4 cup butter melted
  • 2 tablespoons brown sugar
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 4 thick slices French bread toasted
  • 1 cup shredded Gruyere cheese

Method
 

  1. Place the sliced onions in the slow cooker. Pour the melted butter and brown sugar over them and toss to coat.
  2. Cover and cook on low for 8 hours to deeply caramelize the onions.
  3. Pour in the beef broth and thyme, and cook for 1 more hour on high.
  4. Ladle the soup into oven-safe bowls, top each with a slice of toasted French bread and a handful of Gruyere cheese.
  5. Broil in the oven for 2 minutes until the cheese is bubbly and golden.
