14) Crockpot Chile Colorado

Ingredients
  

  • 2 pounds beef chuck roast cut into 1½-inch pieces
  • 2 tablespoons vegetable oil
  • 1 small yellow onion diced
  • 3 garlic cloves minced
  • 2 cups beef broth
  • 1 cup red enchilada sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Heat the oil in a skillet and brown the beef in batches.
  2. Add the beef, onion, and garlic to the crockpot.
  3. Whisk the broth, enchilada sauce, chili powder, cumin, salt, and pepper together. Pour it over the beef.
  4. Cover and cook on low for 7 to 8 hours, until the beef pulls apart easily.
  5. Serve with warm tortillas, rice, and shredded cheese.
