14) Crockpot Beef and Vegetable Soup

Ingredients
  

  • 1 lb beef stew meat trimmed and cubed
  • 4 cups beef broth
  • 3 carrots sliced
  • 2 potatoes peeled and diced
  • 1 cup green beans trimmed and cut
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, undrained
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp cornstarch + 2 tbsp cold water optional, to thicken

Method
 

  1. Brown beef in a skillet for a few minutes to add color, then transfer to crockpot.
  2. Add all vegetables, tomatoes, broth, thyme, bay leaf, Worcestershire, salt, and pepper.
  3. Cook on low 7–8 hours or high 3–4 hours until beef is tender and veggies are soft.
  4. If you want thicker soup, mix cornstarch and water, stir into hot soup, and cook on high 10–15 minutes.
  5. Remove bay leaf, taste, and adjust salt and pepper before serving.
