14) Cream Cheese and Smoked Salmon Pinwheels

Make these the night before and all you have to do the next morning is slice and go. The tortillas firm up overnight in the fridge, which means the pinwheels cut clean and hold their shape on the tray instead of unrolling on you.

Ingredients
  

  • 4 large flour tortillas 10-inch
  • 8 oz cream cheese softened
  • 8 oz smoked salmon thinly sliced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons finely chopped red onion

Method
 

  1. In a bowl, mix cream cheese, lemon juice, dill, and red onion until smooth.
  2. Lay one tortilla flat and spread a thin, even layer of the cream cheese mixture over the whole surface.
  3. Arrange smoked salmon in a single layer on top.
  4. Roll the tortilla up tightly and wrap it in plastic wrap.
  5. Chill for at least 1 hour to firm up.
  6. Slice into 1-inch pinwheels right before serving.
