13) Orange-Glazed Ricotta French Toast Bake

Ricotta in the custard sounds fancier than it is. It just makes the interior creamier and gives the whole thing a slightly cheesecake-adjacent quality, which my kids apparently love. Ingredients
  

  • 1 loaf challah or brioche about 12 oz, cubed
  • 1 1/2 cups whole milk
  • 1 cup ricotta cheese
  • 4 large eggs
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • Zest of 2 oranges
  • 1/3 cup fresh orange juice
  • 1/4 cup butter melted
  • 1 cup powdered sugar

Method
 

  1. Preheat oven to 350°F and grease a 9x13 pan.
  2. Whisk milk, ricotta, eggs, sugar, vanilla, orange zest, and juice until smooth.
  3. Toss bread cubes with melted butter and spread in the pan.
  4. Pour custard over the bread and press gently to soak.
  5. Bake 35–40 minutes until set and golden.
  6. Whisk powdered sugar with 2–3 tbsp orange juice for glaze.
  7. Drizzle glaze over warm casserole and serve.
