13) Mint Chocolate Chip Ice Cream Cake with Oreo Crust

Ingredients
  

  • 24 Oreo cookies crushed (about 2 cups)
  • 6 tbsp melted butter
  • 1 quart mint chocolate chip ice cream softened
  • 1 pint of chocolate ice cream softened
  • 1 cup whipped cream or whipped topping
  • 2 tbsp mini chocolate chips optional

Method
 

  1. Mix crushed Oreos and melted butter. Press into a 9-inch springform pan to form the crust. Freeze 10 minutes.
  2. Spread softened mint chip ice cream over crust. Smooth and freeze 30 minutes.
  3. Add softened chocolate ice cream on top. Smooth and freeze at least 2 hours or overnight.
  4. Remove cake from pan, top with whipped cream and mini chips. Keep frozen until 10 minutes before serving.
