Ingredients Method

Ingredients
  

  • 1 box white cake mix and ingredients called for on box
  • 1 cup sour cream
  • 3 large eggs
  • Zest of 2 limes
  • 1 cup sweetened condensed milk
  • 1 cup evaporated milk
  • 1/2 cup heavy cream
  • 2 tbsp tequila optional
  • 1 cup whipped cream for topping
  • Extra lime zest for garnish

Method
 

  1. Preheat oven to temperature on cake mix box and line a 12-cup muffin tin.
  2. Mix cake mix, sour cream, eggs, and lime zest until smooth. Spoon batter into cups two-thirds full.
  3. Bake per box directions and cool slightly. Poke holes in each cupcake with a fork.
  4. Whisk condensed milk, evaporated milk, heavy cream, and tequila. Spoon over cupcakes so they soak in.
  5. Chill at least 2 hours. Top with whipped cream and lime zest before serving.
