13. Creamy Taco Soup

Taco Tuesday gets a cozy upgrade with this recipe. The addition of cream cheese makes the broth rich and velvety.
Servings: 4 servings

Ingredients
  

  • 1 pound ground beef browned and drained
  • 1 packet 1 ounce taco seasoning
  • 1 packet 1 ounce dry ranch dressing mix
  • 1 can 15 ounces pinto beans, rinsed and drained
  • 1 can 15 ounces corn, drained
  • 1 can 14.5 ounces diced tomatoes, undrained
  • 4 cups beef broth
  • 1 package 8 ounces cream cheese, cubed

Method
 

  1. Brown the ground beef in a skillet, drain the fat, and transfer the meat to the slow cooker.
  2. Add the taco seasoning, ranch mix, pinto beans, corn, diced tomatoes, and beef broth.
  3. Cover and cook on low for 5 hours.
  4. During the last hour of cooking, add the cubed cream cheese. Whisk it gently until it melts into the soup.
