12. Old-Fashioned Vegetable Beef Soup

This soup is packed with vegetables and tender beef. It is the kind of meal that makes you feel good about what you are feeding your family.

Ingredients
  

  • 1.5 pounds beef stew meat cut into small pieces
  • 1 bag 16 ounces frozen mixed vegetables (carrots, peas, corn, green beans)
  • 2 russet potatoes peeled and diced
  • 1 can 14.5 ounces diced tomatoes, undrained
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano

Method
 

  1. Add the beef stew meat, frozen mixed vegetables, and diced potatoes to the slow cooker.
  2. Pour in the diced tomatoes, beef broth, Worcestershire sauce, and oregano.
  3. Stir to combine everything well.
  4. Cover and cook on low for 8 hours until the beef is incredibly tender.
