12) Diced Jalapeño and Lime Crockpot Chicken Tacos

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 medium onion diced
  • 1 –2 jalapeños seeded and diced (adjust for heat)
  • 3 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 2 limes juice and zest of 1
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Place chicken, onion, jalapeño, garlic, broth, lime juice and zest, cumin, chili powder, salt, and pepper in crockpot.
  2. Cook on low 4–5 hours or high 2–3 hours until chicken reaches 165°F and shreds easily.
  3. Shred chicken with two forks in pot, stir to soak up juices, and taste for salt.
  4. Serve in warmed tortillas with chopped cilantro, extra lime wedges, and any kid-friendly toppings.
