12) Crockpot Split Pea and Ham Soup

Ingredients
  

  • 1 lb dried green split peas rinsed
  • 2 cups diced cooked ham about 10 oz
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • Salt to taste start with 1/2 tsp

Method
 

  1. Add peas, ham, onion, carrots, celery, garlic, broth, bay leaf, thyme, and pepper to the crockpot. Stir once.
  2. Cook on low for 6–8 hours or high for 3–4 hours, until peas are very soft. Stir occasionally if you pass by.
  3. Remove bay leaf. Taste and add salt if needed. Use an immersion blender for a smoother texture, or leave chunky. Serve with crusty bread.
