12) Cider-Glazed Apple Hand Pies

Ingredients
  

  • 2 cups peeled diced apples (about 2 medium)
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 1 tbsp apple cider
  • 1 sheet refrigerated pie crust or 2 rounds store-bought
  • 1 egg beaten (for egg wash)
  • 1/2 cup powdered sugar
  • 1-2 tbsp apple cider for glaze

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Toss apples with brown sugar, cinnamon, cornstarch, and 1 tbsp cider in a bowl.
  3. Roll out crust and cut into 4–6 rectangles. Spoon 1–2 tbsp filling onto each.
  4. Fold and seal edges with a fork. Brush with beaten egg and poke two vents.
  5. Bake 18–22 minutes until golden. Cool 10 minutes on a rack.
  6. Whisk powdered sugar with 1–2 tbsp cider to make a glaze. Drizzle over warm pies.
