Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Toss apples with brown sugar, cinnamon, cornstarch, and 1 tbsp cider in a bowl.
- Roll out crust and cut into 4–6 rectangles. Spoon 1–2 tbsp filling onto each.
- Fold and seal edges with a fork. Brush with beaten egg and poke two vents.
- Bake 18–22 minutes until golden. Cool 10 minutes on a rack.
- Whisk powdered sugar with 1–2 tbsp cider to make a glaze. Drizzle over warm pies.
