11) S'mores Ice Cream Cake for Backyard Bonfires

Ingredients Method

Ingredients
  

  • 1 pint marshmallow ice cream or 2 cups marshmallow fluff + 2 cups vanilla ice cream, softened
  • 1 pint chocolate ice cream softened
  • 10 graham crackers crushed (about 1 1/4 cups)
  • 4 tbsp melted butter
  • 1 cup mini chocolate chips
  • 8 large marshmallows for toasting
  • Cooking spray for pan

Method
 

  1. Mix crushed grahams and melted butter, press into a 9-inch springform pan. Chill 10 minutes.
  2. Spread chocolate ice cream over crust. Freeze 20 minutes to firm.
  3. Layer marshmallow ice cream or fluff mixture on top. Sprinkle mini chips. Freeze 30 minutes.
  4. Toast marshmallows over the bonfire or with a kitchen torch and arrange on top just before serving.
  5. Run a warm knife around the pan, release ring, slice with a hot, dry knife.
