11. Salted Caramel Apple Pie Cookies

Fall flavors wrapped up in a neat little package. Dicing the apples very small is the trick to making these bake perfectly.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup finely diced peeling baking apples like Granny Smith
  • 1/4 cup thick caramel sauce
  • Flaky sea salt for sprinkling

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cream the butter and brown sugar together. Add the egg and vanilla.
  3. Mix in the flour and cinnamon.
  4. Gently fold in the finely diced apples.
  5. Drop spoonfuls of dough onto a baking sheet.
  6. Bake for 12 to 14 minutes.
  7. Let the cookies cool. Drizzle with caramel sauce and sprinkle lightly with flaky sea salt.
