11) Maple-Pecan Slow-Cooker French Toast Casserole

Slow cooker French toast is one of those things that sounds risky until you've done it. Set it up before church or before a long morning, and it's ready when you get back. No oven, no watching it, no nothing. Toasty pecans and maple syrup throughout.

Ingredients
  

  • 1 loaf 12 oz day-old French bread, cubed
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup pure maple syrup divided (3/4 cup + 1/4 cup)
  • 1/2 cup brown sugar packed
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 4 tbsp butter cut into small pieces

Method
 

  1. Spray slow-cooker with nonstick spray.
  2. Toss bread cubes into slow-cooker.
  3. Whisk eggs, milk, 3/4 cup maple syrup, brown sugar, vanilla, cinnamon, and salt.
  4. Pour custard evenly over bread and press down gently.
  5. Sprinkle pecans and dot butter pieces on top.
  6. Drizzle remaining 1/4 cup maple syrup over casserole.
  7. Cover and cook on LOW for 3–4 hours until set.
  8. Serve warm, spooning any syrup from the bottom over each portion.
