11) Honey Garlic Chicken Thighs with Pineapple (kid-approved)

Ingredients
  

  • 6 bone-in skin-on chicken thighs (about 2–2.5 lb)
  • 1 cup pineapple chunks fresh or canned, drained
  • 3 tbsp soy sauce
  • 3 tbsp honey
  • 3 garlic cloves minced
  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp grated ginger optional
  • Salt and pepper to taste
  • 1 tsp cornstarch mixed with 1 tbsp water optional for thicker sauce
  • Chopped green onions or sesame seeds for garnish optional

Method
 

  1. Pat chicken dry, season with salt and pepper. Heat oil in a large skillet over medium-high heat.
  2. Sear thighs skin-side down until golden, 6–8 minutes, then flip and cook 4 minutes more. Remove to a plate.
  3. Add garlic and ginger to skillet, cook 30 seconds, then stir in soy sauce, honey, and vinegar.
  4. Return chicken and add pineapple chunks. Reduce heat, cover, and simmer 12–15 minutes until chicken reaches 165°F.
  5. Remove chicken, skim fat if needed, and stir cornstarch slurry into sauce to thicken. Return chicken to coat and garnish.
