11) Cheddar-stuffed mini bell peppers

Servings: 4 servings

Ingredients
  

  • 12 mini bell peppers halved lengthwise
  • 1 cup shredded sharp cheddar
  • 2 tbsp cream cheese softened
  • 1 tsp chopped chives optional
  • Pinch of salt and pepper

Method
 

  1. Clean the peppers and cut each one in half, discarding the seeds. Place them on a small baking sheet with the cut sides facing up.
  2. Combine and mix cheddar, cream cheese, chives, salt, and pepper in a bowl.
  3. Gently press some of the mixture into each half of the pepper so it stays in place.
  4. Bake for 8 to 10 minutes until the cheese has melted and the edges are a light golden brown. Cooking temperature should be 350 degrees Fahrenheit, or 175 degrees Celsius.
  5. Allow it to cool for a few minutes so little hands don't get burned.
