10. Split Pea and Ham Soup

Whenever we have leftover ham from a Sunday dinner, this is the first thing I make. It is a wonderful way to stretch your grocery budget.
Servings: 4 servings

Ingredients
  

  • 1 pound dried split peas rinsed
  • 1 meaty leftover ham bone or 2 cups diced cooked ham
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 6 cups chicken broth
  • 1 bay leaf

Method
 

  1. Place the rinsed split peas at the bottom of the slow cooker.
  2. Add the ham bone, carrots, celery, onion, and bay leaf.
  3. Pour the chicken broth over the top.
  4. Cover and cook on low for 8 hours until the peas have completely broken down and the soup is thick.
  5. Remove the ham bone, shred any meat off it, return the meat to the pot, and discard the bone and bay leaf.
