10. Hungarian Mushroom Soup

The paprika and dill in this recipe make it taste completely different from a standard cream of mushroom soup.
Servings: 4 servings

Ingredients
  

  • 4 tablespoons butter
  • 1 large yellow onion chopped
  • 16 ounces mushrooms sliced
  • 2 teaspoons sweet paprika
  • 1 tablespoon fresh dill chopped
  • 3 cups beef broth
  • 1/2 cup sour cream

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and mushrooms, cooking until the onions are soft and translucent.
  3. Stir in the paprika and fresh dill, cooking for one minute until fragrant.
  4. Pour in the beef broth and bring the soup to a simmer. Let it cook for 15 minutes.
  5. Remove the pot from the heat.
  6. Place the sour cream in a small bowl. Stir a few spoonfuls of the hot soup into the sour cream to temper it, then pour the mixture back into the pot and stir well.
