10. Chicken Cordon Bleu Rice Casserole

Whenever we have leftover ham from Easter or Christmas, this is the first thing I make. It is creamy, savory, and incredibly comforting.
Servings: 4 servings

Ingredients
  

  • 3 cups cooked rice
  • 2 cups cooked chicken diced
  • 1 cup cooked ham diced
  • 1 can 10.5 oz cream of chicken soup
  • 1/2 cup milk
  • 1 tablespoon Dijon mustard
  • 1.5 cups shredded Swiss cheese
  • 1/2 cup panko breadcrumbs

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and grease a 9x13 baking dish.
  2. In a large bowl, whisk together the cream of chicken soup, milk, and Dijon mustard.
  3. Stir in the cooked rice, diced chicken, diced ham, and 1 cup of the Swiss cheese.
  4. Spread the mixture evenly into the baking dish.
  5. Top with the remaining 1/2 cup of Swiss cheese and sprinkle the panko breadcrumbs evenly over the top.
  6. Bake for 30 to 35 minutes until the casserole is bubbling and the breadcrumbs are golden brown.
