1) One-Pot American Goulash with Ground Beef, Elbow Macaroni & Tomato Sauce

Ingredients
  

  • 1 lb 450 g lean ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 cups elbow macaroni dry
  • 1 can 15 oz / 425 g tomato sauce
  • 1 can 14.5 oz / 410 g diced tomatoes, undrained
  • 2 cups beef or chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt more to taste
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese optional
  • Chopped parsley for garnish optional

Method
 

  1. Heat oil in a large Dutch oven over medium. Add onion and cook 3–4 minutes until soft, then add garlic and cook 30 seconds.
  2. Add ground beef and brown, breaking it up with a spoon, about 6–8 minutes. Drain excess fat if needed.
  3. Stir in tomato sauce, diced tomatoes, broth, Worcestershire, oregano, salt, and pepper. Bring to a simmer.
  4. Add dry elbow macaroni, stir to combine, cover, and simmer 12–15 minutes until pasta is tender, stirring once or twice. Add a splash more broth if it gets too thick.
  5. Remove from heat, stir in cheddar if using, and let sit 2 minutes to melt. Garnish with parsley and serve.
