1. Creamy Chicken and Wild Rice Soup

This is a staple in our house when the weather turns chilly. It is pure comfort in a bowl and sticks to their ribs perfectly.

Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 1 cup uncooked wild rice blend
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced yellow onion
  • 6 cups chicken broth
  • 1 teaspoon poultry seasoning
  • 1 cup heavy cream

Method
 

  1. Place the chicken, wild rice, carrots, celery, and onion into the slow cooker.
  2. Pour in the chicken broth and sprinkle with poultry seasoning.
  3. Cover and cook on low for 6 to 7 hours until the chicken is tender and the rice is cooked.
  4. Remove the chicken, shred it with two forks, and return it to the pot.
  5. Stir in the heavy cream and let it heat through for 10 minutes before serving.
