1. Classic Southern Chicken and Wild Rice Casserole

This is my absolute favorite dish to bring to a family who just welcomed a new baby. It reheats beautifully and feels like a warm hug.
Servings: 4 servings

Ingredients
  

  • 3 cups cooked chicken shredded
  • 2 boxes 4.3 oz each long grain and wild rice mix, cooked according to package
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 cup slivered almonds toasted
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9x13 baking dish.
  2. In a large bowl, combine the shredded chicken, cooked wild rice, cream of mushroom soup, sour cream, and chicken broth. Stir until well mixed.
  3. Season with salt and pepper.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the toasted slivered almonds evenly over the top.
  6. Bake uncovered for 40 to 45 minutes until bubbly and heated through.
