1) Classic Ham and Bean Soup

Ingredients
  

  • 1 leftover ham bone with 1–2 cups meat
  • 1 pound dried navy beans soaked overnight
  • 8 cups chicken broth
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Drain and rinse the beans.
  2. Add all ingredients to a large pot.
  3. Bring the soup to a boil, then reduce heat.
  4. Cover and simmer for 2 hours, or until the beans are tender.
  5. Remove the bone and bay leaf. Shred any meat from the bone and stir it back in.
  6. Season with salt and pepper. I serve it with bread for dunking, while my kids pick out the onions.
