  • 1 pound mild Italian sausage
  • 1 yellow onion diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 10-ounce package cheese tortellini

Method
 

  1. Brown sausage and onion in a large pot over medium heat until meat is cooked through; drain excess grease.
  2. Add broth; bring to a gentle simmer.
  3. Stir in cream and tortellini; cook about 5 minutes, until pasta is tender.
  4. Remove from heat; stir in spinach until wilted. Serve warm.
