1. Classic Cream of Mushroom Soup

This is the recipe I turn to when we need pure comfort food. It is rich, creamy, and completely beats the canned version.
Servings: 4 servings

Ingredients
  

  • 4 tablespoons butter
  • 16 ounces cremini mushrooms sliced
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 3 cups beef broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the mushrooms and onion. Cook until the mushrooms are soft and browned.
  3. Stir in the garlic and cook for one more minute.
  4. Sprinkle the flour over the vegetables and stir well to coat.
  5. Slowly pour in the beef broth while whisking constantly to prevent lumps.
  6. Bring the soup to a gentle simmer and let it thicken for about 10 minutes.
  7. Remove from heat, stir in the heavy cream, and season with salt and pepper.
