1) Chicken Spaghetti Food Wishes, James Villas’ Creamy Tex-Mex Chicken Spaghetti

Ingredients
  

  • 12 oz spaghetti broken in half
  • 2 cups cooked shredded chicken rotisserie works great
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 10 oz diced tomatoes with green chiles, drained
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar or Mexican blend
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish optional

Method
 

  1. Cook spaghetti in salted boiling water until just al dente; drain and set aside.
  2. Heat oil in a large skillet over medium; sauté onion and bell pepper 5–6 minutes until softened.
  3. Add garlic, cumin, and chili powder; cook 30 seconds until fragrant.
  4. Stir in tomatoes, chicken broth, and cream; bring to a gentle simmer.
  5. Add shredded chicken and cooked pasta; toss to coat and warm through, 2–3 minutes.
  6. Stir in most of the cheese until melted; season with salt and pepper.
  7. Top with remaining cheese, cover briefly to melt, and garnish before serving.
