1) Caprese Skewers with Balsamic Glaze

These are my most-carried appetizer. I've packed them for July tailgates, spring church suppers, and everything in between. Nothing needs to stay hot, nothing wilts, and they still look put together when you pull back the plastic wrap at the table.

Ingredients
  

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls ciliegine, drained
  • 20 fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 20 small wooden skewers or toothpicks

Method
 

  1. Pat the mozzarella dry with paper towels so the skewers don't get slippery.
  2. Slide one tomato, one basil leaf (folded), and one mozzarella ball onto each skewer.
  3. Lay the skewers on a tray in a single layer.
  4. Drizzle with olive oil and balsamic glaze.
  5. Sprinkle with salt and pepper right before serving.
