1) 15-Minute Shredded Rotisserie Chicken Tortilla Soup (uses store-bought rotisserie, canned tomatoes, and pantry spices)

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion diced (about 1 cup)
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes optional
  • 1 14.5 oz can diced tomatoes with juices
  • 4 cups low-sodium chicken broth
  • 2 cups shredded rotisserie chicken skin removed
  • 1 15 oz can black beans, rinsed and drained
  • 1 cup frozen corn
  • Salt and pepper to taste
  • Juice of 1 lime
  • Tortilla strips or chips shredded cheddar, cilantro, and avocado for serving

Method
 

  1. Heat oil in a large pot over medium heat. Sauté onion 4–5 minutes until soft, then add garlic and spices; cook 30 seconds.
  2. Add tomatoes, broth, chicken, beans, and corn. Bring to a simmer and cook 5–7 minutes to warm through and meld flavors.
  3. Taste and adjust salt, pepper, and lime. Use a spoon to shred any large chicken pieces finer if needed.
  4. Serve with tortilla strips or chips, cheese, cilantro, and diced avocado.
